There is such thing as a "hardcore" gamer, and they do play shooters. Not first person shooters, but real shooters. Like Radiant Silvergun, Ikaruga, Contra, Lords of Thunder, Mega Turrican, Galatic Attack, Space Harrier, Darius Gaiden and Super Metroid. Mario games are also hardcore (gameplay over graphics people).
A "casual" gamer is the type that buys Madden every year, or thinks Call of Duty is a "hardcore shooter" (it's a great game, but definitely not that). A non-gamer (which is what the Wii caters to) just plays games like Chicken Shoot or Carnival Games here and there.
Quake's designers have created Deathmatch environments that reward skill rather than luck, and are filled with nooks and crannies and other lovely places to hide while you wait for the unwitting opponent to stroll by.
