To me a game with good replay value is one that has a story that changes depending on your actions like Infamous for example because you can play it one way then switch when you beat the game that way. Also having a strong online component definitely helps extend the longevity and interest of the game because when you are playing against human opponents you never can really predict what will happen or at least not as much as you could against A.I.
I always find Burnout an interesting online experience, especially when eight guys decide independently to jump off the same ramp at the same time. I have had some good laughs with Burnout. Other games have better action online but I always find the funnest online games for me make me laugh rather than stressed or angry.
I think it is a tie for me between Resistance 1 and The Orange Box. I notice that for me, if gamespot says its worth playing I either rent and play it or own it. Gamespot hasn't failed me yet.

Yes, all PS3 games work on 720p. They look pretty good too. I always here people say "oh you won't believe games at 1080p," which is probably true but 720 is good enough. It definitely beats standard definition especially with games with text or subtitles and small symbols on the game screen. It's kinda funny though that games like Burnout if you play them on standard tvs, the main screen may say "available in HD." Its almost like the industry is forcing us to upgrade.
I would get one now because like some people have mentioned, those slim PS3 photos may be photoshopped. Now since it is summer time, I will have time to waste playing games. Plus I could not wait a whole year to buy one and start gaming.
