It's rather hard to explain, but i feel this comes down to the way Ubisoft develops their games fundamentally, where their emphasise is mostly on presentation, and giving the player things to simply just 'do', and behind that, there is very little substance. Also, Ubisoft's obsession with fancy UI (Which plays into the idea that presentation of their games is paramount), is like a constant reminder of 'You're playing a game!'.
Urgh, like i said, it's rather hard to explain. If i was to boil it down into a simple and overused phrase, i'd say their games lack soul, and they lack a reason for me to actually care about their games, or anything that happens in them. Perhaps i'm just tired of their homogenisation of game mechanics across all their franchises, where you could basically call this AC6, and most people wouldn't even bat an eyelash.
This is a problem i've been having with almost all Ubisoft games. They lack interesting gameplay, and instead go for flashy, masturbatory mechanics that lack any depth or substance. AC being the prime example of this.
