Yes. Wii U will support Directx11 which PS360 do not, it does multitasking, has multi-core processing, and has added ram. The Xbox 720 will be more powerful than it for sure, PS4 maybe but most likely in the same ballpark. I heavily doubt any will run the Unreal Engine 4... Wii U is too far in and pretty much finalized, Sony and MS are most likely too far in to implement it too, plus that would make the consoles at the very least as expensive as the PS3 was during launch which Sony especially can't afford to do with all their money losses lately. That much being said the Xbox 720 does have the best shot at running it, but I doubt it will even be used until 2-3 years in it's life cycle if that's the case. The hardware running the Unreal Engine 4 isn't even available now.
Neither is pushing the console real hard... Pikmin does have some nice lighting, shadowing and texture work, but both look like they're really good and a lot of fun.
Pikmin 3 and NSMB U were my exact predictions and I'm very pleased with that; neither looks ground breaking but both look very solid to say the least. Batman Armored Edition, Mass Effect 3 and Assassin's Creed look really good too from a third party stand point. Wii Fit U looks like it works very well with the new concepts Nintendo introduced... can't believe I'm saying this but I might eventually get it. Nintendo Land looks like a really good idea, but it really looks like a bundle quality game, and the art style was so cheesy it made me wanna vomit... how many bows and rainbows can you slap on a them park.

Please give me actual proof of games that look noticeably better than Pikmin 3. Because Max Payne and Gears 3 don't look as good and I consider them impressive. I honestly fail to see what's so "underwelming" about Pikmin 3. Maybe it's just a matter of taste or the fact that everyone on this board is glued to their M rated-only 360 library, but I think the game looks impressive... Maybe not the best looking game I've ever seen, but it doesn't have any glaring weaknesses and looks much better than what the majority of the people in this thread cut it down to be.
