I bought a bunch to start off with and, to my surprise (not being a major racing sim fan) Forza 5 has kept me coming back more than anything. I'd say AC4 is likely to be the one I go to when that gets old.

Need For Speed looks really good. Only snag is I'm hooked on Forza so have barely played it.
